Consumption of fresh produce is increasing; however, it has been implicated as a transmission vehicle in foodborne outbreaks. This study provides in-depth analyses of the diverse microbial communities on spinach, including metagenomic data on the dynamics of spinach microbiota during washing/packaging and storage processes, a step towards improved control of foodborne pathogens and spoilage.
